Soup….. I love soup…. It is so nice to have something warm on a cold dreary day…. And why do I manage to share warm soup recipes when the leaves are out and sweat stains are in you ask? Because I am not a professional organized blogger yet… and neither do I plan to be… that takes persistence and I have none…
I used it all up this morning being persistent getting my kids out of bed….
There is no finished product picture in this blog… I actually had the time to take the  pictures when I made this soup last month for my birthday and by the time I served it, the thought of staging a picture it had disappeared with my wits.
But if you really need a picture of some soup in a chipped bowl to make this recipe then you need some help…




Onions, carrots, celery and garlic chopped, diced or minced… how ever you want…




Potatoes peeled and diced






Sauté everything but the potatoes with some salt till onions are translucent..






Add broth… vegy or chicken and then add your potatoes… let simmer 20 minutes till potatoes are done




In bowl add milk, cream or half and half…



Add flour…


Whisk








Add milk/flour mixture to soup and stir well… simmer till soup starts to thicken (take a crappy picture while trying to pour the milk in the soup and your lens fog up...)






Add cream cheese…


Stir till cream cheese is completely melted





At this point you can add 1 pound chicken breasts cooked and diced or leave it meatless for the Vegheads!  Add salt and pepper to liking, serve and enjoy!!!

Recipe:

1 onion, finely diced
2 handfuls of baby carrots (or 4-5 reg carrots, sliced small)
2 sticks of celery sliced
Two cloves of garlic minced
4-5 potatoes, finely diced
1 cup milk
4 Tablespoons flour
 8oz cream cheese

Sauté onion, carrots, celery and garlic in butter. Add 3 cups of chicken broth (homemade, from the can or use water seasoned yourself with bouillon or soup base) and potatoes. Add more broth to cover vegetables, if needed. Bring to a boil, then simmer until veggies are tender (about ten to twenty minutes). When veggies are tender, mix the flour with the milk and add to the soup. Add cream cheese to soup little pieces at a time and stir until it is all melted. Add cooked chicken and heat through. Season with salt and pepper.

My hiatus is over….


Everyone is still a jerk but I realized if I waited till they weren’t I would never blog again.

Hoarders is a T.v. show that I would watch with horror… it is like watching a train wreck… you can’t look away…

You can’t eat while watching it either… and since I would usually watch it to get inspired to clean my house it was kinda like a two for one deal…

Your house gets clean and you don’t stuff your face for an hour…


I will take the help anyway I can get it…

Three years ago last month we moved in this house… I had went down to visit Mama soon after and had taken pictures of the house to show her.. for my birthday this year my present for myself was to get the house perfectly cleaned… I didn’t get it perfect but I got all the dirty socks picked up at least.. but I decided to take pictures to compare what it looked like when we moved in…

Hence why Hoarders was brought up…

 Wow just a splash of tomato sauce... dust and various items that fall down from upstairs... I can't see the cobwebs because I am too busy looking at the half dead plants...
 Yeah... I can see the empty spots too... I could put at least two more shelves up...
I offer no apologies... I take no responsibly for my mess.... I am special... they even have a show about me....


 I liked the dining room when we moved in...
 Back then Adam just had a shelf for his paints... 


Now he has his own studio...

I haven't had time to blog ... neither do I want to make time..

I have been casting pearls before swine lately and it hasn’t done nothing for me but cause a extreme case of bad mood and fatigue that I can’t seem to cure…

The side affects of that, is no energy to carry on a conversation with anyone with out them walking away wondering what they did wrong..

So I tried to become a hermit.

But jerks keep pulling me out into the world subjecting themselves to my attitude..

All jokes aside I really don’t feel the need to blog lately… side from personal issues that only time will heal for me I have been dealing with the worry of having to move… where can you rent where you can keep a horse and two dogs?? Let alone the 15 kids and ten fish.

I have also been trying to make two teenagers happy…

I keep asking for the manual on how to raise them and no one will give it to me.. so I am left with a permanent headache…

Coffee no longer is a treat but a necessity to function throughout the day..

Don’t bother giving me all the side affects that come along with drinking so much… I am really not in the mood to hear the latest diet change or  health concern everyone is following.. it will all change in 6 months and I have no energy to listen to why I shouldn’t eat this or drink that…

Hopefully soon everything will go back to normal and I can complain about the heat… until then I need to take a hiatus and heal mentally and try to be strong for my kids..
