Soup….. I love soup…. It is so nice to have something
warm on a cold dreary day…. And why do I manage to share warm soup recipes when
the leaves are out and sweat stains are in you ask? Because I am not a
professional organized blogger yet… and neither do I plan to be… that takes persistence
and I have none…
I used it all up this morning being persistent
getting my kids out of bed….
There is no finished product picture in this blog… I
actually had the time to take the
pictures when I made this soup last month for my birthday and by the time
I served it, the thought of staging a picture it had disappeared with my wits.
But if you really need a picture of some soup in a
chipped bowl to make this recipe then you need some help…
Onions, carrots, celery and garlic chopped, diced or
minced… how ever you want…
Add milk/flour mixture to soup and stir well… simmer till soup starts to thicken (take a crappy picture while trying to pour the milk in the soup and your lens fog up...)
Stir till cream cheese is completely melted
At this point you can add 1 pound chicken breasts cooked and diced or leave it meatless for the Vegheads! Add salt and pepper to liking, serve and enjoy!!!
1 onion, finely diced
2 handfuls of baby carrots (or 4-5 reg carrots, sliced small)
2 sticks of celery sliced
Two cloves of garlic
minced
4-5 potatoes, finely
diced
1 cup milk
4 Tablespoons flour
8oz cream cheese

Sauté onion, carrots, celery
and garlic in butter. Add 3 cups of chicken broth (homemade, from the can or
use water seasoned yourself with bouillon or soup base) and potatoes. Add more
broth to cover vegetables, if
needed. Bring to a boil, then simmer until veggies are tender (about ten to
twenty minutes). When veggies are tender, mix the flour with the milk and add
to the soup. Add cream cheese to soup little pieces at a time and stir until it
is all melted. Add cooked chicken and heat through. Season with salt and pepper.
